Domestic frying pans are usually
sold with a telfon-style non-stick coating. As we all
know, after realtively short time, the non-stick coating
starts to come off, and the pan must then be replaced.
Restaurants need frypans that are robust, have the very
good non-stick qualities and can be put into the oven
(hence no plastic handle).
The straight-sided sauté pan allows quick browning of
food. Its low edges avoid condensation on the sides, allowing
moisture to evaporate and giving improved caramelization
of the juices. Its shape also allows food to be handled
and turned over without coming out of the container. The
rim of this pan is specially rounded in such a way that
pouring is very straight forward. The stainless steel
handle is welded, so it will never come loose, and its
tubular form ensures that it stays cool. This pan can
be used with all types of cooker, including induction
cookers. You can also put it in the dishwasher.
How is this pan typically used?
As an example - cut up a chicken using our
boning
knife, season and coat with flour. Heat some olive
or peanut oil in the Sauté pan shown here. Lay in the
chicken pieces and brown the outsides. Take out the chicken
pieces, add a chopped onion or shallot, chopped carrot,
chopped celery stick and fry gently to let the residue
from the chicken and the vegetables brown together (caramelize).
Deglaze with eg a dash of white wine, and add more liquid,
such as stock or water). Add a bay leaf and thyme and
simmer gently. Strain the contents of the pan through
a
chinois,
and gently simmer the resulting liquid to let it reduce.
Using a desert spoon, spoon-off any oil/fat from the surface.
Bind the sauce, using flour, butter, or crème fraîche.
Add back the chicken pieces into the sauce. Place the
Suaté in the oven to keep warm until ready to serve.
