In order to cook meat professionaly
on a barbecue, you need to be able to sear it properly.
'Searing' is cooking the surface of the meat at a high
temperature until well browned, before reducing the temperature
to cook the meat more gently. You will recognise when
meat is cooked in this way, because you will see the traditional
grill lines on the food.
The problem with conventional barbecue grills, is that
(usually chrome-plated) cooking grills are too lightweight
to sear your meat properly. Why is this? The problem stems
from the fact that a lightweight grill cannot store enough
heat for searing to occur. When you place your steak on
a lightweight grill, the heat that is in it from the charcoal
below gets drawn out by the meat almost straight away,
so you only get a few seconds of searing time, which is
too short. You therefore have to rely on the charcoal
doing the searing, which can dry out you meat, or leave
it looking less than appetizing.
Our Tuscan Grill solves the problem because it is able
to store a large amout of heat. Once the fire below has
got it up to temperature, you place on your meat, and
the cast iron bars will deliver a sufficient amount of
heat for searing, without being cooled down by the meat
itself. Once the seared grill lines appear on your meat or vegetables,
you turn it over and do the same to the other side. You
can even turn your food 90 degrees to get a criss-cross
pattern if you wish. In any case, once the surface looks
good, place the food on a "cooler" area of the grill,
so that searing is stopped, but the inside of the meat
can be gently cooked to perfection.
